Meet our Innovacorp Voucher Winners: Wallace Ridge Farm!

The craft beer industry in Atlantic Canada is expanding rapidly. Wallace Ridge Farm has been growing and supplying hops, a key flavour ingredient in beer, to micro-breweries for the past six years. However, most breweries still use imported hops, since local product has been considered inferior and the flavour palate of local hops has been unknown.  This Voucher project is being led by Dr. Matt McSweeney, School of Nutrition & Dietetics, and Director of Acadia’s Centre for the Sensory Research of Food.  He is looking at the flavour profile of four prevalent hop varieties grown in NS, and comparing these to imported hops products.  This project should fill information gap on consumers’ views of local hops.  It’s hoped that ultimately, this can lead to increased production and sales for local hops, and the creation of new beers using purely NS hops.
